Lay out a large collard leaf veiny side up. Spread goddess dressing. Grate carrots into a heap on the leaf. Slice cherry tomatos lenghthwise and place on top of carrots. Slide avocado and place on top. Fold sides of leaf and then back of leaf and roll towards you while pushing the filling in with a butter knife. Tuck ends under leaf. You’re all wrapped up.
Plate. Slice in half. Enjoy.
