Mezzetta Fire Roasted Marinara
Daiya Mozzarella Cheese
Thaw eggplant and zucchini.
Combine 1 1/2 cups of water with EVOO, salt, 1/4c wheatberries and 1/4c barley. Bring to a boil together.
Preheat oven to 350. Lay 3 pieces of eggplant separately on foil on baking sheet, sprinkle Daiya, lay zucchini on top. Cook for 20 minutes.
Plate the first piece of eggplant & zucchini, top with marinara, continue to layer. Place final piece eggplant side up. Top with marinara.
Plate wheatberry barley on the side.
